Tequila Marinated Swordfish

I made a marinade for some fish and cooked with Jennifer. Here is the recipe:

Ingredients:

  • half a cup of tequila (i bought a super cheap bottom shelf plastic bottle)
  • two swordfish steaks
  • 4 limes / lemons (i used two of each i think)
  • cilantro (this would be to taste)
  • lime / habanero hot sauce (found this at Whole Foods)

Instructions:

Put everything in a ziplock bag and let it sit in the fridge a few hours. Then grill it.

Notes:

So. I bought the tequila to test this theory out. I wanted to see if I could make a marinade with tequila as the base and not much else. This worked pretty well. The sugar in the tequila charred a bit and the fish was really tender and not too dry. The primary flavors of the fish was the citrus and then the tequila.

Ill definitely be perfecting this some more. Probably getting this closer to a margarita marinade. Ill also be getting better tequila and adding more cilantro.
